To celebrate the beautiful bounty of spring produce we present the second instalment in our culinary basics workshop series, which will guide you through the process of creating restaurant-quality dishes regardless of your level of cooking experience or whether you attended our first instalment.
 
Here at the Mediterranean Culinary Academy we firmly believe that, without great ingredients you can't have great cuisine. Each session will begin by guiding you through the process of sourcing great quality, seasonal products, before teaching you the best ways to prepare them.  
 
Throughout the workshop, our chef instructors will demonstrate professional knife skills and teach you a number of versatile cooking techniques that you can then use in a wide array of recipes. By the end of each session we guarantee you’ll leave our kitchen with the confidence to produce quick, delicious meals in the comfort of your own home. 
 
What will be covered in this session? 

Spring vegetable quiche, herb salad, citrus vinaigrette

  • Identifying and preparing spring produce
  • Blanching green vegetables
  • Shortcrust pastry
  • Custardy quiche filling
  • Emulsifying a simple salad dressing
  • Preparing and dressing a salad
  • Kitchen professionalism: timing, cleanliness and organisation 
  • Basic knife cuts and techniques 
  • Plating food beautifully

    Regardless of what we’re cooking, you don’t have to worry about a thing as we’ll provide all the recipes, tools and ingredients you need for the session. All we ask is that you turn up on time so we can all get started together! 

    After we’re done? Well, things don’t end once the cooking session is complete. You can choose to enjoy the fruits of your labour as we sit around the table and dig into our meal with a glass of wine or take it home to share with your loved ones.

    The Mediterranean Culinary Academy classroom at No 5, Sappers Street, Valletta

    All of our workshops will be held at our purposely-designed professional kitchen class room on Sapper Street in Valletta, conveniently close to the nearby open-air public car park.

    Our modular classroom has been created to morph effortlessly between technical and theory exercises, with plenty of space for you to work, cook and learn. Designed for up to 12 students and a lecturer at a time, our classroom is also home to the latest cooking equipment – although it still feels like a comfortable home kitchen.
