Under the guidance of our team of chefs, you’ll have the entire process of preparing authentic, hand rolled pasta demonstrated to you. Learn to transform flour, egg and water into silky sheets of pasta, used to create beautiful tortellini stuffed with a Maltese lamb filling. To complement the pasta we will be taking advantage of the bounty of Summer vegetables, sourced from our network of local farmers, to create a stunning ragu.

Regardless of what we’re cooking, you don’t have to worry about a thing as we’ll provide all the recipes, tools and ingredients you need for the session. All we ask is that you turn up on time so we can all get started together! After we’re done? Well, things don’t end once the cooking session is complete. You can choose to enjoy the fruits of your labour as we sit around the table and dig into our meal with a glass of wine or take it home to share with your loved ones.

  • Making a pasta dough & lamb farce from scratch.
  • Rolling, stuffing & shaping tortellini and cooking them to perfection. 
  • Utilising the dough trimmings to make tagliatelle & drying them.
  • Sautéing vegetables and toasting nuts.
  • Making a sauce from local & seasonal ingredients.
  • Kitchen science: Starches & emulsification of sauces.  
  • Kitchen professionalism: timing, cleanliness and organisation.
  • Basic knife cuts and techniques.
  • Plating food beautifully

The Mediterranean Culinary Academy classroom at No 5, Sappers Street, Valletta

All of our workshops will be held at our purposely-designed professional kitchen class room on Sapper Street in Valletta, conveniently close to the nearby open-air public car park.

Our modular classroom has been created to morph effortlessly between technical and theory exercises, with plenty of space for you to work, cook and learn. Designed for up to 12 students and a lecturer at a time, our classroom is also home to the latest cooking equipment – although it still feels like a comfortable home kitchen.
