Now that lampuki season is open we thought it would be a perfect opportunity to release the fifth edition of our culinary basics workshop series to guide you through the process of preparing this beautiful fish at home.
From selecting the best quality, most sustainable catch from your local fishmonger to storing, cleaning, filleting and cooking it to perfection.

We’ll be preparing two dishes during this session: sautéed lampuki with a simple Summer salad and lightly cured lampuki tartare.

Skill Level: Easy

During the session you’ll learn how to:
Identify signs of freshness in fish
Sustainably source fish
Clean and fillet a whole fish 
Prepare fish stock from the bones
Perfectly sauté a fillet of fish
Lightly cure the fish and make a simple tartare
Dress a simple Summer salad 
Apply kitchen professionalism: timing, cleanliness and organisation. 
Perform basic knife cuts and techniques. 
Plate food beautifully

The Mediterranean Culinary Academy classroom at No 5, Sappers Street, Valletta

All of our workshops will be held at our purposely-designed professional kitchen class room on Sapper Street in Valletta, conveniently close to the nearby open-air public car park.

Our modular classroom has been created to morph effortlessly between technical and theory exercises, with plenty of space for you to work, cook and learn. Designed for up to 12 students and a lecturer at a time, our classroom is also home to the latest cooking equipment – although it still feels like a comfortable home kitchen.
