Carob Honey ­is a very particular type of honey, dark coloured and above all expressing a unique aroma that in someway resembles chocolate that gives its distinctive character over other honeys

 

Honey bees collect nectar from Carob trees (Ceratonia siliqua), in Autumn to produce a monofloral Carob honey. Similar to other dark honeys, it contain it is rich properties such as in minerals and antimicrobial activity  which make this honey a healthy alternative against the common flu. 

 

This is honey very well appreciated in the Mediterranean region and  because it is not harvested every year it is considered as a rare honey. This is due to the sensitive nature of the Carob flowers towards rain.
